Temp My Tummy Tuesday --zucchini patties


Like everyone else,we have an abundance of zucchini and yellow squash from our garden and I couldn't wait to use this recipe.
2 cups shredded zucchini
2 eggs,beaten
1/2 cup all purpose flour
1/4 cup chopped onion
1/2 grated parmesan cheese
1/2 cup mozzarella cheese
salt to taste
oil fir frying
Combine all ingredients in a bowl.Stir well enough to to distribute all ingredients evenly.
Heat oil in pan over a medium high heat.Drop zucchini mixture in heaping tablespoonfuls and cook for a few minutes on each side until golden.
I changed the recipe a bit,I used only a tablespoon of flour and a 1/3 cup of italian seasoned bread crumbs.I also didn't use the mozzarella cheese since I didn't have any.Be sure to squeeze out the excess water from the grated zucchini otherwise it will be too runny.These were really good and my hubby loved them!I had left over zucchini so I slice the rest up into thick slices,dipped them in the leftover egg mixture then in the bread crumbs and fried until golden brown.Those were good too!I served them with grilled chicken,corn on the cob and a salad with our garden tomatoes!If you've never had homegrown tomatoes,you must try them,they are delicious!For more great recipes or to join TMTT visit Lisa at Blessed with Grace.

Yum! I always wanted to grow a garden but i don't have a green thumb. Someone gave me some yellow squash last year and I made something similar. Yours look really good.

Oh I'm thrilled to find something new to do with squash!! LOL! Once it starts coming in from the garden, it just keeps coming! :) Fantastic sounding recipes. My children and my husband thank you. :)

Sounds yummy! I'm jealous of your zucchini in the garden; ours didn't do well at all. But we're new to gardening so who knows what we did wrong! We did get a lot of peas and okra, though, so I'm thankful for that!

I can now tell my kids I've found someone else who makes zucchini pancakes. My kids put applesauce on top of them and enjoy them.
